Basic Roasted Potatoes

Ingredients

  • 2 lbs. Yellow or Red Potatoes, Yukon Gold potatoes work nicely here.
  • 2 T. Olive Oil or Vegetable Oil
  • 1 t. Diamond Crystal Kosher Salt, Use 1/2 t. if using Morton’s
  • 1/4 t. Black Pepper

    Preheat the oven to 425 degrees.

    Half the potatoes and then cut them into wedges. Add them to a large bowl. Add the oil, salt, and pepper. Toss to coat.

    Add the potatoes to a large sheet pan in one layer. Roast for 20 minutes. Remove from oven and use a thin spatula to turn the potatoes to the other side. Roast another 15-20 minutes. They should be crispy and golden on both sides. Enjoy!
